Homemade Granola Recipe

I am equal parts health conscious and lazy, in that, I don't like working out but I do try (and fail!) to eat healthy. Hubs and I try to get done with dinner by 7, and that leaves us super hungry by 10:00 and we reach for the dreaded unhealthy snacks in our pantry.



And before you feel bad about having late dinners, lemme mention that this 7 o'clock schedule is only on weekdays, we live pretty much like hippies on the weekend. No offense, hippies. And in our pursuit of healthy snacks, I decided to make granola and store it.

So, when late-night hunger strikes, there's always a healthier option available. And of course, you can also have it with some fruits and greek yogurt, stick it in a mason jar and call yourself a hipster!



RECIPE (Alton Brown's Recipe

Prep Time: 5 minutes 
Cooking Time: 1 hour and 15 min ( Pick a documentary on Netflix while it's cooking ;))

Things You Need:

3 Cups Old Fashioned Oats
1 Cup Chopped Almonds (any available nuts in the pantry), I mixed Almonds and pecans
3/4 Cup Shredded Coconut
1/2 Cup Brown Sugar
1/2 Cup Maple Syrup
1/4 Cup Vegetable Oil
Pinch of Salt 
1 Cup Raisins

Directions:
  • Combine the Oats, nuts, coconut and brown sugar in a bowl.
  • Combine maple syrup, vegetable oil and salt in a seperate bowl. 
  • Combine both the mixture and mix well.
  • Preheat oven to 250 degrees F.
  • Spread the mixture onto a sheet pan.
  • Cook for 1 hour and 15 minutes. Make sure to stir every 15 minutes to achieve an even color. 
  • Remove from oven and add raisins to the mixture and mix well and store.
